Method

Cooking the Filet Mignon

  1. 1

    Prepare the Steak

Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes.

  2. 2

    Season the Steak

Pat the steak dry with paper towels and season both sides generously with salt and black pepper.

  3. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  4. 4

    Sear the Steak

Add the filet mignon to the pan and sear for 3-4 minutes on one side until a brown crust forms.

  5. 5

    Flip and Add Flavor

Flip the steak over and add the butter, garlic cloves (smashed), and rosemary to the pan. Cook for an additional 3-4 minutes, basting the steak with the melted butter.

  6. 6

    Check for Doneness

Use a meat thermometer to check for doneness: 130°F for medium-rare, 140°F for medium, and 150°F for medium-well.

  7. 7

    Rest the Steak

Remove the steak from the pan and let it rest on a cutting board for about 5 minutes before slicing.

Cooking Optional Sides

  1. 8

    Prepare Asparagus

Trim the ends of the asparagus and toss them with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 10-12 minutes until tender.

  2. 9

    Boil Potatoes

Place the potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes until fork-tender, then drain and serve.
