Method

Preparing the Steak

  1. 1

    Season the Steak

Pat the NY Strip Steak dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder. Let the steak sit at room temperature for about 30 minutes to absorb the flavor.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers. Make sure the oil is hot but not smoking.

  3. 3

    Sear the Steak

Carefully place the steak in the hot skillet. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

  4. 4

    Flip the Steak

Turn the steak over and add the fresh thyme to the skillet. Cook for another 4-5 minutes for medium-rare, or longer if you prefer it more done.

  5. 5

    Rest the Steak

Transfer the steak to a cutting board and let it rest for at least 5 minutes before slicing to allow the juices to redistribute.

Preparing Optional Sides

  1. 6

    Cook the Asparagus

While the steak is resting, you can prepare the asparagus. Heat another tablespoon of olive oil in a separate pan over medium heat. Add the asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender.

  2. 7

    Prepare the Potatoes

For the potatoes, wash and cut them into quarters. Boil in salted water for about 15-20 minutes or until fork-tender. Drain and toss with butter, salt, and pepper to taste.
