    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Fry the Vegetables

    Add the Brussels sprouts to the hot oil, cut side down. Cook for about 5-7 minutes until they start to brown. Add the chopped red bell pepper and sliced onion, cooking for an additional 3-5 minutes until everything is crispy and tender.

    Add Lime and Agave

    Drizzle the lime juice and agave syrup over the vegetables, tossing to combine. Season with salt and black pepper to taste.

    Serve

    Remove from heat and transfer to a serving dish. Top with crumbled cotija cheese before serving.
