Salad Preparation

Prepare the Romaine Lettuce
Wash the Romaine lettuce thoroughly under cold water. Pat dry with paper towels, then chop into bite-sized pieces.

Prepare the Croutons
If using store-bought focaccia, cut into small cubes and bake in a preheated oven at 375°F (190°C) for about 10 minutes or until crispy. Alternatively, you can use homemade croutons.

Prepare the Anchovies
Drain the anchovy fillets and chop them roughly. Reserve a couple for garnishing if desired.

Assemble the Salad
In a large bowl, combine the chopped Romaine lettuce, croutons, chopped anchovies, and shaved Grana Padano cheese.

Make the Dressing
In a small bowl, mash the garlic clove with a fork. Add the Dijon mustard, Worcestershire sauce, lemon juice, salt, and freshly ground black pepper. Whisk until combined.

Emulsify with Olive Oil
While whisking, slowly drizzle in the extra virgin olive oil until the dressing is well combined and emulsified.

Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly. Garnish with reserved anchovy fillets and additional shaved Grana Padano if desired. Serve immediately.
