Eggplant Preparation

Prep the Eggplants
Slice the eggplants into 1/4-inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out moisture and bitterness.

Rinse and Dry
Rinse the eggplant slices under cold water and pat them dry with paper towels.

Breading Station
Set up a breading station: Place flour in one shallow dish, beat the eggs in another, and place breadcrumbs in a third dish.

Bread the Eggplants
Dredge each eggplant slice in flour, dip in the beaten eggs, then coat with breadcrumbs. Set aside on a plate.

Prepare Sauce
Add the crushed tomatoes to the saucepan. Stir in dried oregano, salt, and black pepper. Simmer for 15-20 minutes.

Stir in chopped fresh basil just before removing from heat.
Assembly and Topping

Preheat Oven
Preheat the oven to 375°F (190°C).

Cook Pasta
Cook ziti rigati pasta according to package instructions until al dente, then drain.

Layer Ingredients
In a baking dish, spread a layer of tomato sauce at the bottom. Layer half of the fried eggplant slices on top, followed by a layer of mozzarella and parmesan cheese.

Repeat the layers with the remaining ingredients, ending with cheese on top.

Bake in preheated oven for 25-30 minutes until the cheese is bubbly and golden.
