    Prepare the Cauliflower

    Preheat your oven to 425°F (220°C). Cut the cauliflower into florets and place them in a large mixing bowl.

    Season the Cauliflower

    Drizzle the cauliflower florets with 2 tablespoons of olive oil, add salt, black pepper, and garlic powder. Toss until the florets are evenly coated.

    Roast the Cauliflower

    Spread the seasoned cauliflower florets on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender.

    Caramelize the Onions

    While the cauliflower is roasting, slice the onions thinly. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.

    Toast the Pine Nuts

    In another small skillet, toast the pine nuts over low heat for about 5 minutes, stirring frequently until they are golden and fragrant. Remove from heat.

    Combine Ingredients

    Once the cauliflower is roasted, remove it from the oven and let it cool slightly. In a large bowl, combine the roasted cauliflower, caramelized onions, golden raisins, toasted pine nuts, and bread crumbs. If using, add the Parmesan cheese.

    Transfer the mixture to a serving dish and enjoy warm or at room temperature.
