Prepare the Calamari
Begin by cleaning the calamari. Remove the head and innards, then rinse under cold water. Pat dry with paper towels and cut the bodies into rings.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk the eggs until well combined.

Coat the Calamari
Dip each calamari ring first into the egg mixture, then dredge in the flour mixture, ensuring they are well coated.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the Garnish
While the calamari is frying, prepare the fried capers and sliced banana peppers. You can fry capers in a small amount of oil until crispy.

Assemble the Dish
On a serving platter, place a bed of arugula. Top with the fried calamari, then sprinkle the fried capers and sliced banana peppers over the top.

Serve immediately with a side of spicy lemon aioli for dipping.
