Prepare glass

Choose a highball or Collins glass. Fill it with ice to chill while you prepare the cocktail.

Build base

In a cocktail shaker or mixing glass filled with a few ice cubes, pour 2 oz Malfy gin, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup.

Shake or stir

If you prefer a slightly frothy, colder blend, shake the mixture vigorously for 8–10 seconds. For a lighter, clearer drink, stir gently for 10–15 seconds to chill and dilute.

Assemble

Discard the ice from the chilled serving glass and add fresh ice (about 1 cup or enough to fill). Strain the gin mixture into the glass over the fresh ice.

Top with tonic

Gently top the cocktail with about 3 oz cold tonic water. Pour slowly over the back of a spoon if you want to preserve more carbonation.

Finish & garnish

Optional: add 1 dash of bitters on top for aromatic lift. Express a lemon twist over the drink to release oils and drop it in, or garnish with a lemon wheel on the rim. Add a mint sprig if desired and give the glass a gentle stir (1–2 turns) to integrate.

Serve

Serve immediately while cold and fizzy. Sip and adjust future versions to taste (slightly more simple syrup if you prefer sweeter; more lemon if you prefer brighter).
