Make syrup
Combine sugar and water in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer; do not boil vigorously. Add the halved chilli (with seeds for more heat, seeded for milder) and reduce heat to low. Simmer gently for 3–4 minutes to release capsaicin and flavor, then remove from heat and allow to steep until cool, about 20–30 minutes depending on desired heat level.
Once cooled to room temperature, taste and remove the chilli when the syrup has reached your preferred spiciness. Strain the syrup through a fine mesh sieve into a clean bottle or jar. Store in the refrigerator for up to 2 weeks. Use 1/2 oz per cocktail as listed.
Cocktail Assembly
Shake cocktail
Fill a cocktail shaker halfway with ice. Add vodka (2.5 oz), dark chocolate liqueur (1 oz), chilli-infused simple syrup (0.5 oz), and espresso (0.75 oz). If you prefer a colder, frothier finish, double-strain; otherwise single strain is fine.
Dry shake (optional)
For a slightly frothy crema from the espresso, optionally shake ingredients without ice for 5–8 seconds, then add ice and shake vigorously for 10–15 seconds until well chilled.
Strain and serve
Double-strain the cocktail into the prepared chilled glass to remove ice shards and any chilli bits. Garnish with a thin slice of fresh red chilli floated on the surface for visual heat and an orange twist over the top to express citrus oils, then drop it in.
Adjustments and tips
Taste and adjust sweetness or heat: add 0.25 oz more chilli syrup for more sweetness/heat or a dash of simple syrup if needed. If too spicy, add a splash (0.25 oz) of cream or half-and-half to soften the heat and add a silky texture (this creates a richer, dessert-style drink).
