Roasted Garlic Oil

Prepare Roasted Garlic Oil
Preheat your oven to 350°F (175°C). Take the garlic cloves and peel them. Place the peeled garlic cloves in a small baking dish and cover them with olive oil. Roast in the oven for about 25-30 minutes, or until the garlic is golden and soft. Remove from the oven and let it cool slightly before straining the oil into a clean container.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half vertically if they are large.

Roast the Vegetables
Preheat your oven to 425°F (220°C). On a large baking sheet, toss the halved Brussels sprouts and cherry tomatoes with the roasted garlic oil, salt, black pepper, and red pepper flakes. Spread them out in a single layer and roast for 20-25 minutes, or until the Brussels sprouts are golden brown and tender.

Add Cheese
Once the vegetables are roasted, remove them from the oven and sprinkle the mozzarella and parmesan cheese over the top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Prepare Spicy Honey Glaze
In a small bowl, mix the honey with a pinch of red pepper flakes. Adjust the amount of red pepper flakes to your taste for desired spiciness.

Finish and Serve
