Prepare the Meat

    Cook the Chorizo

    In a skillet over medium heat, cook the ground chorizo sausage until browned and fully cooked through, about 5-7 minutes. Stir occasionally to break it up. Once cooked, remove from the skillet and set aside.

    Cook the Chuck Patty

    In the same skillet, add the ground chuck and form it into a patty. Season with salt and pepper if desired. Cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove and let it rest.

Prepare the Toppings

    Chop the Vegetables

    Dice the tomato and avocado into small pieces. Slice the grilled poblano pepper into strips.

    Prepare the Queso

    If using pre-made queso, heat it in a small saucepan over low heat until warm. If making from scratch, prepare according to your favorite recipe.

    Make Chipotle Mayo

    In a small bowl, combine the chipotle mayo with a dash of lime juice for added flavor. Mix well.

Assemble the Burger

    On the bottom half of the pub bun, layer the cooked chuck patty, followed by the chorizo sausage. Pour over the warm queso cheese, then add diced tomato, avocado, and grilled poblano pepper strips. Finally, sprinkle crushed tortilla chips on top for crunch, and drizzle with chipotle mayo before placing the top half of the bun.
