Preparation of Ingredients

    Prepare the Salmon

    Preheat your grill or grill pan over medium-high heat. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika. Rub this mixture onto both sides of the salmon fillets.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and place on a paper towel to drain excess fat.

    Slice the Vegetables

    While the bacon is cooking, slice the tomato and red onion. Set aside.

Grilling and Assembly

    Grill the Salmon

    Once the grill is hot, place the seasoned salmon on it. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Toast the Buns

    During the last couple of minutes of grilling the salmon, place the pub buns cut side down on the grill to toast lightly.

    Assemble the BLT

    Spread 2 tablespoons of ancho cherry jam on the bottom half of each toasted bun. Layer with spring mix, grilled salmon, crispy bacon, tomato slices, and red onion. Top with the other half of the bun.
