Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, combine kosher salt, black pepper, and garlic powder. Rub the mixture over the prime rib roast, ensuring it’s evenly coated. Drizzle olive oil over the roast and rub it in.

Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 hours for medium-rare, or until the internal temperature reaches 130°F (54°C).

Rest the Meat
Remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before carving.

Mash the Potatoes
Drain the potatoes and return them to the pot. Squeeze the roasted garlic out from its head and add it to the potatoes along with gouda cheese, heavy cream, and butter. Mash until smooth and creamy.

Prepare the Horseradish Sauce
In a small bowl, mix together prepared horseradish, sour cream, and lemon juice. Stir until well combined and refrigerate until ready to serve.
