Prepare Tortilla Chips

Cut and Fry Tortillas
Cut the corn tortillas into quarters to create triangle shapes. Heat the vegetable oil in a large frying pan over medium-high heat. Once the oil is hot, carefully add the tortilla pieces in batches, frying until they are golden and crispy, about 2-3 minutes per batch. Use a slotted spoon to transfer the fried chips to a paper towel-lined plate to drain excess oil.

On a large baking sheet, spread the freshly fried tortilla chips in an even layer. Sprinkle the shredded cheddar cheese evenly over the chips, followed by the sliced jalapeños.

Melt Cheese
Preheat your oven to 350°F (175°C). Place the baking sheet with the nachos in the oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.

Once the nachos are out of the oven, let them cool slightly before serving. Serve with salsa on the side for dipping.
