Prepare the Potatoes
Wash and slice the russet potatoes thinly, about 1/8 inch thick.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the potato slices to the hot oil in batches. Fry until golden brown, about 3-4 minutes.

Remove the chips with a slotted spoon and drain on paper towels. Immediately sprinkle with salt.

In a medium saucepan over low heat, add Velveeta and cream cheese. Stir until melted and smooth.

Stir in the diced tomatoes, milk, cumin, chili powder, and salt. Continue stirring until combined and heated through.

Prepare the Pork
Rub the pork shoulder with onion powder, garlic powder, salt, and black pepper.

Place the pork in a slow cooker with water. Cook on low for 8 hours or until the pork is tender and easily shredded.

On a large serving platter, layer the house potato chips, followed by a generous drizzle of house queso, then the BBQ pulled pork.
