Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the ribeye steak into small cubes. Finely chop the onion, garlic, bell pepper, and jalapeño pepper. Rinse the pinto beans if using canned.

Cooking

  1. 2

    Brown the Meats

In a large pot, over medium-high heat, add the cubed ribeye and ground chuck. Cook until browned, about 5-7 minutes. Drain any excess fat.

  2. 3

    Sauté Vegetables

Add the chopped onion, garlic, bell pepper, and jalapeño to the pot. Sauté for another 5 minutes until the vegetables are soft.

  3. 4

    Combine Ingredients

Stir in the pinto beans, diced tomatoes, ale, beef broth, chili powder, cumin, salt, and black pepper.

  4. 5

    Simmer

Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 2-3 hours, stirring occasionally. The longer it simmers, the more the flavors will develop.

Serving

  1. 6

    Serve the Chili

Serve hot in cups or bowls, garnished with your favorite toppings like cheese, sour cream, or green onions if desired.
