Marinating Chicken

    Prepare the Marinade

    In a bowl, mix together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

    Marinate the Chicken

    Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours).

Grilling Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Chicken

    Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

Cooking Seasonal Vegetables

    Prepare the Vegetables

    In a large bowl, combine the sliced zucchini, bell peppers, and carrots. Drizzle with olive oil, and season with salt and black pepper. Toss to coat.

    Cook the Vegetables

    Heat a grill basket over the grill or sauté pan over medium heat. Add the vegetables and cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.

Making Mashed Potatoes

    Cook the Potatoes

    In a large pot, add the peeled and cubed potatoes and cover with water. Bring to a boil and cook until the potatoes are tender (about 15-20 minutes). Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
