Fries Preparation

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into fry shapes, about 1/4 inch thick.

Season the Fries
In a large bowl, toss the cut potatoes with olive oil, salt, and black pepper until well coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 30-35 minutes, flipping halfway through until golden brown and crispy.

Prepare the Garlic Oil
In a small saucepan, combine the garlic cloves and olive oil. Heat over low heat until the garlic is fragrant and lightly golden, about 15-20 minutes. Remove from heat and let it cool, then strain out the garlic.

Combine Toppings
Once the fries are done baking, drizzle the prepared garlic oil over the fries. Sprinkle with parmesan cheese and chopped fresh parsley before serving.

Make the Garlic Aioli
In a mixing bowl, combine mayonnaise, minced garlic cloves, lemon juice, and salt. Mix well until smooth and creamy.

Chill the Aioli
Cover and refrigerate the garlic aioli for at least 30 minutes before serving to allow the flavors to meld.
