Method

White Queso

  1. 1

    Prepare the Poblano Peppers

Roast the poblano peppers over an open flame or under a broiler until the skin is charred. Place them in a plastic bag for about 10 minutes to steam, then peel off the skin, remove the seeds, and chop finely.

  2. 2

    Make the Cheese Mixture

In a medium saucepan over low heat, combine the white American cheese, cream cheese, and milk. Stir continuously until melted and smooth.

  3. 3

    Add Seasonings

Add the roasted poblano peppers, garlic powder, cumin, and salt to the cheese mixture. Stir well to combine and heat for another 5 minutes, ensuring everything is well mixed and warmed through.

Salsa

  1. 4

    Prepare the Salsa Ingredients

Chop the fresh tomatoes, red onion, and cilantro finely.

  2. 5

    Mix the Salsa

In a bowl, combine the chopped tomatoes, red onion, cilantro, lime juice, and salt. Mix well and let sit for 10-15 minutes to allow the flavors to meld.

Chips

  1. 6

    Prepare the Tortilla Chips

Cut the corn tortillas into triangles. Heat the oil in a deep frying pan over medium heat.

  2. 7

    Fry the Chips

Fry the tortilla triangles in batches until they are golden and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.
