Caramelize the Onions
Slice the medium onion into thin rings. In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the onion slices and cook slowly, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized. Remove from heat and set aside.

Cook the Bacon
In the same skillet, add 2 slices of bacon and cook until crispy, about 5-7 minutes, flipping halfway. Remove and place on paper towels to drain the excess fat.

Form the Patty
While the bacon is cooking, shape the 10 oz of ground chuck into a patty. Make a slight indentation in the center to prevent it from puffing up while cooking.

Cook the Patty
In the same skillet, add another tablespoon of butter over medium-high heat. Place the patty in the skillet and cook for about 4-5 minutes on one side. Flip the patty, add a slice of cheddar cheese on top, and cook for another 3-4 minutes until the cheese melts and the patty reaches your desired doneness.

Assemble the Patty Melt
On one slice of sourdough bread, spread 1 tablespoon of BBQ sauce. Place the cooked patty with melted cheese on top, followed by the caramelized onions and crispy bacon. Top with the second slice of sourdough bread.

Grill the Patty Melt
In the same skillet, add the remaining tablespoon of butter and place the assembled sandwich in the skillet. Grill for 3-4 minutes on each side until both sides are golden brown and crispy. Press down slightly with a spatula for even grilling.
