BBQ Sauce Preparation

Make the BBQ Sauce
In a medium saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well and bring to a simmer. Reduce heat and let simmer for about 15 minutes, stirring occasionally. Remove from heat and set aside.

Prepare the Pork
Season the pork shoulder generously with salt, black pepper, garlic powder, and onion powder. Place in a slow cooker or a large pot. Pour in 1 cup of the prepared BBQ sauce over the pork.

Cook the Pork
If using a slow cooker, cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredable. If using a pot, cover and simmer on low heat for 4-5 hours, adding water if necessary to keep moist.

Layer the Ingredients
Preheat your oven to 375°F (190°C). In a baking dish, layer the shredded pulled pork, followed by mozzarella cheese, parmesan cheese, and cheddar cheese. Top with pineapple chunks and sliced jalapenos.

Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool slightly before serving.
