Prepare strawberries
Hull and quarter the fresh strawberries. Place them in a blender or food processor with 2 tablespoons cold water and 2 tablespoons granulated sugar.

Blend until smooth (15–30 seconds). If you prefer a very smooth lemonade, strain the purée through a fine mesh sieve into a bowl to remove seeds and pulp, pressing with the back of a spoon. You should end up with about 3/4 to 1 cup strawberry purée.

Stir in the fresh lemon juice (3 tbsp) and lime juice (1 tbsp) into the strawberry purée until combined.
Sweetener & Chill

Taste the strawberry-lemon-lime mixture. Add 2 tablespoons simple syrup (or additional sweetener) if you want it sweeter; mix until dissolved. Adjust sugar level to taste. Chill mixture for at least 5 minutes or use immediately over ice for a colder drink.

Fill a large serving glass or pitcher with about 1 cup ice (adjust amount depending on how cold/diluted you want the drink).

Pour the chilled strawberry-citrus mixture over the ice, leaving room for soda. Top with 1 cup club soda (or sparkling water) and gently stir once to combine. Taste and add more soda or simple syrup as desired.

Lightly clap or bruise the mint leaves between your hands to release aroma and add to the glass. Garnish with lemon slices and strawberry slices.

Serve immediately with a straw or stirrer. For a pitcher, multiply ingredients by number of servings and add soda just before serving to retain fizz.
