Pastry Preparation

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the oil and mix until the mixture resembles breadcrumbs.

    Knead the Dough

    Gradually add water, kneading the mixture until it forms a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a pan, heat a little oil over medium heat. Add cumin seeds and allow them to splutter.

    Add Vegetables

    Add the green peas and cook for 2-3 minutes. Then add the boiled mashed potatoes, coriander powder, garam masala, chopped green chili, and salt. Mix well and cook for another 5 minutes. Remove from heat and let it cool.

Assembling and Frying

    Roll Out the Pastry

    Divide the dough into small balls. Roll each ball into a thin oval or circle on a lightly floured surface.

    Shape the Samosas

    Cut the rolled dough in half. Take one half and form a cone, sealing the edge with a little water. Fill the cone with the potato and pea filling, then seal the open edge by pressing it together with water.

    Fry the Samosas

    Heat oil in a deep frying pan over medium heat. Once hot, gently lower the samosas into the oil and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
