    Chop Vegetables

    Wash and chop the carrots, bell peppers, cauliflower, green beans, and zucchini into bite-sized pieces.

    Mince Aromatics

    Peel and finely mince the garlic and ginger. Chop the onion into small pieces.

Cooking

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent, about 5 minutes.

    Add Vegetables

    Add the chopped carrots, bell peppers, cauliflower, green beans, and zucchini to the pot. Stir well and cook for another 5-7 minutes until they start to soften.

    Add Curry Powder

    Sprinkle the curry powder over the vegetables and stir to coat evenly.

    Pour in Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a simmer.

    Season

    Add salt and black pepper to taste. Let the curry simmer for about 15-20 minutes, or until the vegetables are tender and the sauce has thickened.

Serving

    Garnish and Serve

    Chop the fresh cilantro and squeeze lime juice over the curry before serving. Serve hot with rice or bread.
