Basmati Rice
Marinated Chicken
Fried Onions
Spices
Method
Preparing the Rice
- 1
Rinse the Rice
In a large bowl, rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.
- 2
Soak the Rice
Soak the rinsed rice in water for at least 30 minutes. This will help the grains cook evenly.
- 3
Cook the Rice
In a large pot, bring 8 cups of water to a boil. Add salt and the soaked rice. Cook the rice until it's 70% done (it should still have a bite). Drain and set aside.
Marinating the Chicken
- 4
Prepare the Marinade
In a large mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, chopped cilantro, mint leaves, lemon juice, and salt.
- 5
Marinate the Chicken
Add the chicken pieces to the marinade. Mix well to ensure all pieces are coated. Cover the bowl and let it marinate for at least 1 hour (or overnight in the refrigerator for best results).
Frying Onions
- 6
Heat Oil
In a frying pan, heat the oil over medium heat.
- 7
Cooking the Biryani
- 8
Layering
In a large, heavy-bottomed pot, layer half of the marinated chicken at the bottom. Add half of the partially cooked rice on top.
- 9
Spices and Remaining Chicken
Place bay leaves, cinnamon stick, cloves, and cardamom on top of the rice. Then layer the remaining marinated chicken followed by the rest of the rice.
- 10
Final Cooking
Cover the pot with a tight-fitting lid. Cook on low heat for about 30-40 minutes until the chicken is fully cooked and the flavors meld together.
Serving
- 11
Garnish and Serve
Once cooked, carefully fluff the biryani with a fork. Garnish with crispy fried onions, and serve hot with raita or salad.
