Dosa Batter
Method
Preparing the Batter
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the semolina, rice flour, and all-purpose flour. Mix well to ensure even distribution of the flours.
- 2
Add Wet Ingredients
Add the yogurt and water to the dry ingredients. Whisk until smooth and there are no lumps. The batter should be of a pouring consistency.
- 3
Season the Batter
Add cumin seeds, salt, chopped green chilies, chopped ginger, and chopped coriander leaves to the batter. Mix well to incorporate all ingredients.
- 4
Rest the Batter
Let the batter rest for at least 30 minutes. This allows the semolina to absorb the water and helps in better fermentation.
Cooking the Dosa
- 5
Heat the Pan
Heat a non-stick skillet or tawa over medium heat. Once hot, lightly grease it with a few drops of oil.
- 6
Pour the Batter
Stir the batter well as it may settle. Pour a ladleful of batter onto the center of the hot pan and quickly spread it in a circular motion to form a thin dosa.
- 7
Cook the Dosa
Drizzle a little oil around the edges of the dosa. Cook for about 2-3 minutes or until the edges start to lift and the bottom is golden brown.
- 8
Flip and Cook
Carefully flip the dosa using a spatula and cook the other side for an additional 1-2 minutes until it is golden and crispy.
- 9
Serve Hot
Remove the dosa from the pan and serve hot with chutney and sambar.
