Prepare the batter

Mix dry ingredients
In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, baking soda, and salt.

Add water
Gradually add water to the dry mixture while whisking, until you achieve a smooth, thick batter without lumps.
Prepare the vegetables

Fry the pakoras

Heat oil
In a deep frying pan, heat the oil over medium heat until it reaches about 350°F (175°C).

Fry the batter-coated vegetables
Using a spoon or your hands, carefully drop spoonfuls of the batter-coated vegetable mixture into the hot oil. Fry in batches, making sure not to overcrowd the pan.

Cook until golden brown
Fry the pakoras for about 4-5 minutes, or until they turn golden brown and crispy. Flip them occasionally for even cooking.

Drain excess oil
Once cooked, remove the pakoras from the oil and place them on paper towels to drain excess oil.
