    Slice the Onions

    Thinly slice the onions and place them in a large mixing bowl.

    Add Spices

    To the sliced onions, add cumin seeds, turmeric powder, red chili powder, and salt. Mix well and let it sit for about 10 minutes to allow the onions to release their moisture.

    Prepare the Batter

    After 10 minutes, add chickpea flour and rice flour to the onion mixture. Mix until the onions are well coated. If the mixture seems too dry, add water one tablespoon at a time until the batter is thick and sticky. Optionally, add chopped fresh coriander leaves for added flavor.

    Heat the Oil

    In a deep frying pan or kadai, heat the vegetable oil over medium heat until hot, but not smoking.

    Fry the Bhajis

    Using your hands or a spoon, take small portions of the batter and carefully drop them into the hot oil. Fry in batches, making sure not to overcrowd the pan.

    Cook Until Golden Brown

    Fry the bhajis for about 4-5 minutes or until they are golden brown and crispy. Stir occasionally to ensure even cooking.

    Drain Excess Oil

    Once cooked, remove the bhajis from the oil and place them on a plate lined with paper towels to drain excess oil.
