Preparation

    Prepare the Spices

    Crush the green cardamom pods and black peppercorns slightly to release their flavors. You can use a mortar and pestle or the back of a spoon.

    Boil Water

    In a saucepan, bring 2 cups of water to a boil over medium heat.

Brewing the Tea

    Add Tea and Spices

    Once the water is boiling, add the crushed spices, cloves, cinnamon stick, grated ginger, and loose black tea leaves. Stir well.

    Simmer

    Reduce the heat and let the mixture simmer for about 5-7 minutes to allow the flavors to meld.

    Add Milk and Sugar

    After simmering, add 1 cup of milk and 2 tablespoons of sugar to the saucepan. Stir to combine.

Final Steps

    Boil Again

    Increase the heat and bring the mixture back to a boil. Let it boil for an additional 2-3 minutes.

    Strain and Serve

    Remove from heat and strain the chai into cups using a fine mesh strainer to remove the tea leaves and spices. Serve hot.
