Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine the plain yogurt, lemon juice, ginger paste, garlic paste, ground cumin, ground coriander, turmeric powder, garam masala, red chili powder, and salt. Mix well until all ingredients are thoroughly combined.

  2. 2

    Marinate the Chicken

Cut the chicken breast into bite-sized cubes and add them to the marinade. Stir well to coat the chicken pieces evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Grilling the Chicken

  1. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed and glowing.

  2. 4

    Skewering the Chicken

Thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  3. 5

    Grill the Chicken

Brush the grill grates with vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  4. 6

    Check for Doneness

Ensure the internal temperature of the chicken reaches 165°F (75°C). Remove the skewers from the grill.

  5. 7

    Garnish and Serve

Transfer the grilled chicken tikka to a serving platter, garnish with fresh cilantro, and serve with naan or rice.
