Make the Dough
In a large bowl, combine all-purpose flour and salt. Add ghee or oil and mix until the mixture resembles coarse crumbs.

Gradually add water, a little at a time, and knead the mixture to form a smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Add Chicken and Spices
Add ground chicken to the pan, along with cumin powder, coriander powder, garam masala, and salt. Cook until the chicken is fully cooked and no longer pink.

Stir in chopped green chili, fresh cilantro, and lemon juice. Mix well and let it cool.

Roll the Dough
Divide the rested dough into small balls. Roll each ball into a thin oval shape, about 6 inches in diameter.

Shape the Samosas
Cut each oval in half to form two semi-circles. Take one semi-circle, and form a cone by bringing the straight edge together, sealing with a little water. Fill the cone with the chicken filling and seal the top by pinching the edges together.

In a deep frying pan, heat oil over medium heat. Carefully add the samosas in batches and fry until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
