    Marinate the Chicken

    In a large mixing bowl, combine the chicken cubes, yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well to coat the chicken evenly.

    Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for better flavor.

    Coat the Chicken

    After marinating, add cornflour and rice flour to the chicken mixture. Mix until the chicken is well coated with the flours.

Frying

    Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small piece of the marinated chicken into the oil; it should sizzle immediately.

    Carefully add the coated chicken pieces to the hot oil in batches, making sure not to overcrowd the pan.
