Method
Preparation
- 1
Marinate the Chicken
In a large mixing bowl, combine the chicken cubes, yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well to coat the chicken evenly.
- 2
Refrigerate
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for better flavor.
- 3
Coat the Chicken
After marinating, add cornflour and rice flour to the chicken mixture. Mix until the chicken is well coated with the flours.
Frying
- 4
Heat the Oil
Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small piece of the marinated chicken into the oil; it should sizzle immediately.
- 5
Fry the Chicken
Carefully add the coated chicken pieces to the hot oil in batches, making sure not to overcrowd the pan.
- 6
Drain the Chicken
Fry the chicken for about 5-7 minutes or until golden brown and crispy. Remove the chicken from the oil using a slotted spoon and drain on paper towels.
- 7
Fry the Curry Leaves
In the same oil, add curry leaves and fry for a few seconds until crispy. Remove and set aside.
Serving
- 8
Garnish and Serve
Serve the fried Chicken 65 hot, garnished with crispy curry leaves and lemon wedges on the side.
