    Marinate the Pork

    In a large bowl, combine the pork, ancho chili powder, chipotle peppers in adobo sauce, minced garlic, cumin, oregano, salt, black pepper, white vinegar, and pineapple juice. Mix well to ensure the pork is evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and discard the marinade. Grill the pork for about 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 145°F. Remove from heat and let it rest for 10 minutes.

    Slice the Pork

    After resting, slice the pork thinly against the grain. Set aside.

Taco Assembly

    Prepare the Tacos

    Warm the corn tortillas on the grill or in a skillet until they are pliable, about 1 minute on each side.

    On each tortilla, place a portion of the sliced pork. Top with diced fresh pineapple, chopped onion, and cilantro.
