Preparation of Filling

    Cook the Onion and Beans

    In a skillet, heat olive oil over medium heat. Add finely chopped onion and sauté until translucent, about 5 minutes. Stir in the cooked black beans and continue to cook for another 2 minutes. Remove from heat.

    Combine the Filling

    In a large bowl, combine the sautéed onion and black beans with shredded cheese and chopped cilantro (if using). Mix until well combined.

Preparation of Sauce

    Make the Enchilada Sauce

    In a saucepan over medium heat, add olive oil and garlic. Sauté until fragrant, about 1 minute. Stir in the red enchilada sauce, cumin, and salt. Bring to a simmer and cook for 5 minutes, stirring occasionally.

Assembling the Enchiladas

    Prepare the Tortillas

    Warm the corn tortillas in a dry skillet or microwave for a few seconds to make them pliable.

    Fill the Tortillas

    Take a warm tortilla and place a generous spoonful of the filling in the center. Roll the tortilla tightly around the filling and place seam side down in a baking dish.

    Repeat

    Repeat the process until all tortillas are filled and placed in the baking dish.

    Top with Sauce

    Pour the prepared enchilada sauce evenly over the filled tortillas in the baking dish.

    Bake

    Preheat the oven to 375°F (190°C). Bake the enchiladas uncovered for 20-25 minutes until heated through and the cheese is melted.

Serving

    Garnish and Serve

    Remove the enchiladas from the oven. Top with sour cream, sliced jalapeños, and chopped green onions if desired. Serve hot.
