    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until fully cooked and browned. Remove from heat and drain excess fat.

    Melt the Cheeses

    In a mixing bowl, combine Monterey Jack cheese, cheddar cheese, and cream cheese. Mix well until incorporated.

    Combine Ingredients

    Add the cooked chorizo into the cheese mixture and stir until evenly distributed.

    Heat the Mixture

    Transfer the cheese and chorizo mixture into a cast-iron skillet or an oven-safe dish. Place the skillet in a preheated oven at 350°F (175°C) or under a broiler for about 10-15 minutes, or until the cheese is melted and bubbly.

    Prepare the Tortillas

    While the cheese is melting, warm the flour tortillas in a separate skillet or microwave until soft and pliable.

    Once the queso is melted and bubbly, remove it from the oven and serve immediately with warm tortillas. Garnish with fresh cilantro, sliced jalapeños, and diced tomatoes if desired.
