Rinse the Rice
In a fine-mesh strainer, rinse the long-grain white rice under cold running water until the water runs clear. This removes excess starch and helps achieve a smooth texture.

Soak the Rice
In a large bowl, combine the rinsed rice with 4 cups of water and the cinnamon sticks. Cover and let it soak for at least 4 hours, or preferably overnight. This allows the flavors to meld.
Blending

Blend the Mixture
After soaking, remove the cinnamon sticks and transfer the rice and soaking water to a blender. Blend on high speed until the rice is finely ground and the mixture is milky, about 1-2 minutes.

Strain the Mixture
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher or bowl. Use a spatula to press down on the solids to extract as much liquid as possible.

Chill and Serve
Refrigerate the horchata for at least 2 hours to chill. Serve over ice and sprinkle with ground cinnamon before serving for added flavor.
