Preparation

    Prepare the Chicken Filling

    In a mixing bowl, combine the shredded cooked chicken with salt, pepper, and half of the chopped cilantro. Mix well and set aside.

    Soften the Tortillas

    In a skillet, heat the olive oil over medium heat. Lightly fry the corn tortillas for about 10-15 seconds on each side until they are pliable. Remove from the skillet and set aside.

Assembly

    Fill the Tortillas

    Take a softened tortilla and place about 2-3 tablespoons of the chicken filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish.

    Repeat Filling

    Continue this process until all tortillas are filled and placed in the baking dish.

Baking

    Add Sauce and Cheese

    Pour the green enchilada sauce evenly over the filled tortillas. Sprinkle the shredded cheese over the top.

    Bake the Enchiladas

    Preheat your oven to 375°F (190°C). Bake the enchiladas for about 20-25 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Once baked, remove the enchiladas from the oven. Top with remaining chopped cilantro and dollops of sour cream. Serve hot.
