Prepare the Bread
Preheat the oven to 350°F (175°C). Cut the stale bread into cubes and place in a large mixing bowl.

Mix the Custard
In a separate bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, ground cinnamon, ground nutmeg, and bourbon until well combined.

Combine Bread and Custard
Pour the custard mixture over the bread cubes. Gently fold in the chopped pecans. Allow the mixture to sit for about 15 minutes to soak up the custard.

Bake the Pudding
Transfer the mixture to a greased baking dish. Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.

Serve
Allow the bread pudding to cool slightly before serving. Drizzle with salted caramel sauce before serving.
