Method

Making the Beef Fat Chocolate Pâte

1

Melt the Chocolate

Preheat your oven to 350°F (175°C). In a saucepan, melt the beef fat and dark chocolate together over low heat, stirring until smooth.

2

Combine Ingredients

In a mixing bowl, whisk together the sugar, eggs, vanilla extract, and salt until well combined. Gradually add the melted chocolate mixture and stir until smooth.

3

Add Flour

Fold in the all-purpose flour until just combined. Pour the mixture into a greased baking pan and bake for 25-30 minutes or until set.

Making the Anise Shortbread Cookies

4

Prepare the Dough

In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the anise seeds and salt, mixing well.

5

Incorporate Flour

Gradually add the all-purpose flour, mixing until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

6

Bake the Cookies

Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and cut into desired shapes. Place on a baking sheet and bake for 10-12 minutes until lightly golden.

Making the Spiced Peach Jam

7

Cook the Peaches

In a large pot, combine the diced peaches, sugar, lemon juice, cinnamon, ginger, and salt. Cook over medium heat, stirring frequently until the peaches break down and the mixture thickens, about 20-25 minutes.

8

Cool and Store

Remove from heat and let cool. Transfer the jam to sterilized jars and refrigerate until ready to use.
