Prep Seafood and Filling
Dice shrimp
Rinse shrimp and pat dry. Chop the shrimp into small 1/4-inch pieces so they distribute evenly in the flautas.
In a medium bowl, combine the chopped shrimp and picked-over crab meat. Gently fold in the softened cream cheese, 2 tablespoons crema (or sour cream), chopped cilantro, sliced green onions, chopped jalapeño (if using), lime zest, lime juice, ground cumin, smoked paprika, 1 teaspoon salt, and 1 teaspoon black pepper. Mix until homogeneous but avoid overworking — you want some texture from the seafood. Taste and adjust seasoning.
Assemble Flautas
Warm tortillas: Wrap a stack of tortillas in a damp kitchen towel and microwave for 20–30 seconds, or warm them briefly in a dry skillet — this makes them pliable and less likely to crack when rolled.
Spoon about 2 tablespoons of the seafood filling lengthwise along one edge of each warmed tortilla. Roll tightly into a cylinder and place seam-side down on a tray. If desired, secure each flauta with a toothpick.
If using the crisp coating: place panko in one shallow dish and the beaten egg mixed with 1 tablespoon flour in another. Lightly brush each rolled flauta with a little beaten egg (or brush with oil) and roll in panko to coat evenly. Place on a plate seam-side down.
Cook Flautas
Pan-fry method (recommended for balanced crispness): In a large skillet, pour 4–6 tablespoons vegetable oil and heat over medium-high until shimmering but not smoking (about 350°F/175°C if using a thermometer). Add flautas seam-side down in a single layer without crowding. Cook 2–3 minutes per side, turning carefully with tongs until golden-brown and crisp on all sides and the shrimp is cooked through. Transfer to a wire rack or paper towels to drain. If using toothpicks, remove them after cooking.
Baking method (lighter option): Preheat oven to 425°F (220°C). Place assembled flautas seam-side down on a baking sheet lined with parchment. Brush each flauta lightly with oil. Bake 12–16 minutes, turning once halfway through, until golden and crisp. If using panko coating, bake an additional 2–4 minutes or broil briefly to crisp the crumbs—watch carefully to avoid burning.
Make Avocado Crema
While flautas cook, make the avocado crema: In a blender or with an immersion blender, combine the ripe avocado, 4 tablespoons crema (or sour cream), 1 tablespoon lime juice, 1 teaspoon salt, and 1–2 tablespoons water. Blend until smooth and pourable. Adjust salt and lime to taste. If you prefer a thinner sauce, add water 1 teaspoon at a time.
Serve
Arrange shredded cabbage or chopped lettuce on a serving platter. Place hot flautas on top. Drizzle or serve the avocado crema on the side for dipping. Garnish with extra cilantro leaves and lime wedges. Serve immediately while crisp.
Leftovers: Refrigerate cooled flautas in an airtight container up to 2 days. Reheat in a 400°F (200°C) oven for 8–10 minutes to re-crisp.
