Prepare Veal Cutlets
Pound the veal cutlets to an even thickness for uniform cooking. Season both sides with salt, black pepper, and Italian seasoning.

Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the sliced onion, bell peppers, zucchini, broccoli, and mushrooms. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender. Season with salt and pepper to taste.

Cook Veal Cutlets
In another skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the seasoned veal cutlets and cook for about 3-4 minutes on each side, or until they are browned and cooked through (internal temperature should reach 145°F or 63°C).

Combine and Serve
Once the veal cutlets are cooked, top each cutlet with the sautéed vegetable mixture. Sprinkle grated Parmesan cheese over the top. Serve hot.
