Pound the veal cutlets to about 1/2 inch thickness if they are not already, ensuring even cooking.

Dredge each veal cutlet in the flour, shaking off any excess. Dip into the beaten eggs, allowing excess to drip off, then coat with breadcrumbs, pressing firmly to adhere.

In a large skillet, heat the olive oil over medium-high heat. Fry the breaded cutlets for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.

In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried veal cutlets in a single layer over the sauce. Top each cutlet with marinara sauce and then sprinkle with mozzarella cheese.
