Pasta Preparation

Cook the Fettuccine
In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
Shrimp Preparation

Sauté the Shrimp
In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the shrimp and cook for about 2-3 minutes on each side or until they turn pink and are opaque. Season with salt and black pepper. Remove from heat and set aside.
Pesto Preparation

Make the Pesto Sauce
In a food processor, combine the fresh basil leaves, pine nuts, grated Pecorino cheese, minced garlic, and a pinch of salt and black pepper. While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Adjust seasoning to taste.
Combine and Serve

Combine All Ingredients
In a large bowl, combine the cooked fettuccine, sautéed shrimp, and pesto sauce. Toss gently until everything is well coated. If the pasta is too dry, add a little pasta water to loosen it up.

Serve immediately, garnished with extra grated Pecorino cheese and fresh basil leaves if desired.
