Ravioli Dough

    Prepare the Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a shaggy dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Ricotta Filling

    Make the Filling

    In a medium bowl, combine the ricotta cheese, Parmesan cheese, egg yolk, salt, black pepper, and chopped basil. Mix until well combined and creamy.

Meatballs

    Prepare the Meatballs

    In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until just combined. Form into golf ball-sized meatballs.

    Cook the Meatballs

    In a skillet over medium heat, add olive oil and cook the meatballs until browned on all sides, about 10 minutes. Remove from skillet and set aside.

Marinara Sauce

    Make the Sauce

    In the same skillet, add more olive oil if necessary. Add minced garlic and sauté for 1 minute until fragrant. Add crushed tomatoes, salt, black pepper, chopped basil, and sugar. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.

    Combine Meatballs

    Add the cooked meatballs back into the sauce and let simmer for an additional 10 minutes.

Assemble Ravioli

    Roll the Dough

    After the dough has rested, roll it out on a floured surface until very thin. Use a ravioli cutter or a knife to cut into squares.

    Fill the Ravioli

    Place a teaspoon of the ricotta filling in the center of each square. Moisten the edges with water, then fold over to create a pocket and seal the edges tightly.

    Cook the Ravioli

    In a large pot of salted boiling water, cook the ravioli for 3-4 minutes until they float to the surface. Remove with a slotted spoon.

Serve

    Plate the Dish

    Serve the ravioli topped with the meatballs and marinara sauce. Garnish with additional chopped basil and grated Parmesan if desired.
