Method
Prep
- 1
Freeze cheese sticks
Unwrap the 6 mozzarella sticks, place them in a single layer on a parchment-lined tray or plate, and freeze for at least 1 hour (ideally 1–2 hours) until very firm. This helps prevent cheese from leaking when frying.

Coat cheese sticks
Work with one frozen cheese stick at a time. Dredge the stick in the seasoned flour, shaking off excess. Dip into the egg wash to coat completely, then roll in the breadcrumb mixture, pressing gently so crumbs adhere. For best results, repeat the egg wash and breadcrumb step for a double coating.

Frying
- 5
Heat oil
Pour about 3–4 cups of vegetable oil into a heavy-bottomed pot or deep skillet, leaving at least 2 inches of headspace. Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb piece — it should sizzle and brown within about 45 seconds.
- 6
Fry the sticks
Fry the breaded mozzarella sticks in small batches (2–3 at a time) to avoid crowding. Carefully lower each stick into the hot oil and fry for about 30–45 seconds per side, turning once, until golden brown. Do not over-fry — long exposure will cause cheese to burst out.
- 7
Using a slotted spoon or spider, transfer fried sticks to a plate lined with paper towels to drain. Let rest 1–2 minutes before serving; the cheese will be very hot.
Serving
- 8
Serve the 6 mozzarella sticks warm with marinara sauce for dipping. If desired, garnish marinara with a pinch of Parmesan and a sprinkle of chopped fresh basil or parsley.
