Preheat and prepare dough
Preheat your oven to 500°F (260°C). If you have a pizza stone, place it in the oven while it heats. On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round (or shape to fit your pan). Brush the top lightly with 1 tablespoon olive oil to help browning and to act as a thin barrier so the crust resists sogginess.

Season the chicken
Pat the chicken breast dry. Season both sides with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder.

Cook the chicken
Heat 1 tablespoon vegetable oil in a skillet over medium-high heat (or preheat a grill). Cook the chicken 4–6 minutes per side until internal temperature reaches 165°F (74°C) and there is no pink. Remove from heat and let rest 5 minutes.

Shred and toss in buffalo sauce
While the chicken rests, melt 1 tablespoon unsalted butter in a small bowl or microwave-safe cup. Stir in 3 tablespoons hot sauce until combined. Shred the cooked chicken with two forks into bite-sized pieces, place in a bowl, pour the butter-hot sauce mixture over the shredded chicken, and toss until evenly coated. Taste and add a bit more hot sauce if you want it spicier.

Assemble the pizza
Move the stretched dough to a pizza peel or baking sheet dusted with semolina or flour (or directly onto the preheated pizza stone). Evenly sprinkle 1 1/2 cups shredded mozzarella over the dough, leaving a 3/4-inch border for the crust. Distribute the shredded buffalo chicken evenly over the mozzarella. Scatter 1/4 cup thinly sliced red onion across the pizza. Sprinkle 1/2 cup crumbled blue cheese evenly on top (you can reserve a little to add after baking if you prefer larger crumbles).

Bake the pizza
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, until the crust is golden and cheese is melted and bubbling. Rotate halfway through baking if your oven has hot spots.

Garnish and serve
Remove the pizza from the oven. Let rest 2 minutes, then sprinkle 2 tablespoons thinly sliced scallions and optional 1 tablespoon chopped cilantro or parsley over the top. Drizzle 1/2 cup ranch or blue cheese dressing either in a zig-zag over the whole pizza or serve on the side for dipping. If desired, add an extra tablespoon of hot sauce for heat. Slice into 6–8 slices and serve immediately.
