    Slice and season chicken

    Pat the chicken dry and thinly slice across the grain into 1/8–1/4 inch strips. In a bowl combine smoked paprika, garlic powder, onion powder, kosher salt, black pepper and olive oil. Toss the sliced chicken in the seasoning mixture until evenly coated.

    Cook chicken

    Heat a large skillet or cast-iron pan over medium-high heat. Add a drizzle of oil (if pan is dry). Add the seasoned chicken in a single layer and cook, stirring occasionally, until browned and cooked through, about 5–7 minutes. Reduce heat to medium-low and stir in 1/2 cup BBQ sauce; cook 1–2 minutes more until sauce is hot and coats the chicken. Remove from pan and keep warm.

Veggies & Cheese

    Caramelize onions and sauté peppers/mushrooms

    In the same skillet over medium heat, add 1 tablespoon butter. Add the sliced onion and a pinch of salt; cook, stirring occasionally, until soft and deep golden, about 8–10 minutes. Add sliced green pepper and mushrooms (if using) and cook until vegetables are tender and edges are lightly charred, about 4–6 minutes more. Taste and adjust seasoning with a pinch of salt and pepper.

    Combine with chicken

    Return the BBQ-coated chicken to the pan with the vegetables and toss to combine and rewarm over low heat for 1–2 minutes so flavors meld.

    Add cheese

    Divide the chicken and vegetable mixture into four portions in the pan. Lay 1–2 slices of provolone or mozzarella over each portion. Cover the pan with a lid for 1–2 minutes to melt the cheese, or briefly place under a broiler until cheese is bubbly and melted (watch closely).

    Prepare rolls

    If desired, spread mayonnaise on the cut sides of the hoagie rolls. Optionally toast the rolls: melt remaining butter in a separate skillet over medium heat and place rolls cut-side down until lightly golden, about 1–2 minutes.

    Assemble sandwiches

    Using a spatula, transfer each cheesy BBQ chicken and vegetable portion onto the bottom half of a roll. Top with pickle slices and a sprinkle of chopped parsley or cilantro if using. Close the roll and press gently.

    Serve hot

    Serve the BBQ chicken cheesesteaks immediately while hot. Offer extra BBQ sauce on the side.
