    Prepare and marinate chicken

    Trim any excess fat from the chicken breasts and thinly slice each breast across the grain into 1/8–1/4-inch slices. Place slices in a bowl. Add 1 tbs olive oil, 1 tsp Worcestershire sauce, 1 tsp garlic powder, 1 tsp onion powder, 3 tsp kosher salt, and 1 tsp black pepper. Toss to coat evenly and let rest 10 minutes while you prepare vegetables (or up to 30 minutes refrigerated).

    Chop or rough-cut

    After resting, roughly chop the sliced chicken into bite-size pieces or thin strips to mimic cheesesteak texture.

    Slice vegetables

    Peel and halve the onion, then thinly slice into half-moons. Core and seed the green bell pepper and thinly slice into strips. If using mushrooms, wipe and slice them thinly.

    Sauté vegetables

    Heat 1 tbs butter or oil in a large skillet over medium-high heat. Add the sliced onion and bell pepper and a pinch of salt. Cook, stirring occasionally, until softened and beginning to caramelize, about 6–8 minutes. Add mushrooms during the last 3–4 minutes if using. Transfer vegetables to a plate and keep warm.

Cook Chicken

    Cook chicken in skillet

    In the same large skillet, add 1 tbs vegetable oil and warm over medium-high heat. Add the chopped marinated chicken in a single layer (work in two batches if necessary). Let cook undisturbed 2–3 minutes to get some browning, then stir and continue cooking until cooked through and no longer pink, about 4–6 minutes total depending on thickness. Season to taste with a little extra salt and pepper if needed.

    Combine with vegetables

    Return the sautéed vegetables to the skillet with the cooked chicken and toss together until evenly mixed and heated through, about 1–2 minutes.

Cheese & Assembly

    Melt cheese over mixture

    Lower the heat to medium-low. Arrange the chicken-and-veg mixture into four equal portions in the skillet. Top each portion with a slice of provolone or American cheese. Cover the skillet with a lid or a sheet of foil for 1–2 minutes to let cheese melt.

    Toast rolls

    While cheese is melting, spread 1/2 tps butter (or a light smear of mayonnaise) on the insides of each hoagie roll. Heat a separate skillet or griddle over medium heat and toast rolls cut-side down until lightly golden, about 1–2 minutes.

    Assemble sandwiches

    Scoop each cheesy chicken-and-vegetable portion into a toasted roll. If desired, spread mayonnaise on the top bun and sprinkle chopped fresh parsley over the filling. Serve immediately.
