Prepare pickles

Drain the dill pickle chips in a colander for at least 10 minutes, then pat dry thoroughly with paper towels. Excess surface moisture prevents the batter from adhering and causes oil splatter. If pickle chips are very wet, spread on paper towels and press gently with another towel to remove as much brine as possible.

Heat oil

Pour about 3 to 4 cups vegetable oil into a deep heavy pot or a deep fryer so oil depth is about 2 inches. Heat oil to 350°F (175°C). If you don't have a thermometer, heat until a small pinch of dry flour sizzles and browns slowly.

Make batter

Whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp paprika in a bowl. In a separate bowl whisk the egg with 1 cup cold club soda (or icy water). Pour wet ingredients into dry and stir briefly until just combined; the batter should be slightly thick but still pourable and bubbly. If batter seems too thick add 1 to 2 tablespoons cold water or club soda. Keep batter cold by placing the bowl over another bowl with ice or chilling briefly until ready to fry.

Dredge and batter

Place 1/4 cup flour for dredging on a plate. Working in small batches to avoid overcrowding, dust each dried pickle chip lightly in the flour (shake off excess) then dip into the batter, allowing excess to drip off. Proper dredging helps the batter stick to the wet pickle surface.

Fry

Carefully lower battered pickle chips into the hot oil in a single layer, frying 4–6 chips at a time depending on pot size. Fry at 350°F (175°C) until golden brown and crisp, about 1.5 to 2.5 minutes per side (total 3–4 minutes). Turn chips as needed with tongs or a slotted spoon for even color. Do not overcrowd the pot — maintain oil temperature between batches by adjusting heat and allowing oil to return to 350°F.

Drain and season

Using a slotted spoon, transfer fried pickle chips to a wire rack set over a baking sheet or to paper towels to drain for a minute. While still hot, sprinkle lightly with a pinch of salt. Repeat with remaining pickles.

Cajun ranch (dipping sauce)

Combine 1/2 cup mayonnaise, 1/4 cup sour cream and 1/4 cup buttermilk in a bowl and whisk until smooth.

Add 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried dill, 1 tsp cajun seasoning, 1/2 tsp hot sauce (optional), 1/2 tsp fresh lemon juice, 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning — add more cajun seasoning for heat or more buttermilk to thin. Chill the sauce at least 15 minutes to let flavors meld; stir before serving.

Finish and serve

Arrange fried pickle chips on a platter, garnish with chopped parsley, and serve immediately with the chilled Cajun ranch and lemon wedges on the side for squeezing over the chips if desired.
