Prepare the Corn
If using corn on the cob, bring a large pot of water to a boil. Add the corn and cook for about 5-7 minutes until tender. If using kernels, skip this step.

Make the Chipotle Aioli
In a bowl, mix the mayonnaise, sour cream, chopped chipotle peppers, lime juice, garlic powder, and salt until smooth. Adjust seasoning to taste.

Assemble the Street Corn
Once the corn is cooked, let it cool slightly. If using corn on the cob, cut the kernels off the cob and place them in a serving bowl. If using kernels, place them directly in the bowl.

Add Toppings
Drizzle the chipotle aioli over the corn and sprinkle with queso fresco, chopped cilantro, and chili powder to taste. Serve immediately.
